Barton Ranch Chicken
Featuring Austin Spice Company's Smoky Hill Salsa Verde.
For a quick easy meal, use already prepared ingredients
and assemble in 10 minutes! When we have the time, we stew fresh
chicken with onion, salt and pepper, using the meat and the broth.
Cooked shredded chicken (4-6 cups)
2 cans condensed cream of chicken soup
2 cups chicken broth
3/4 - 1 cup of Smoky Hill Salsa Verde
1 4oz can chopped green chiles
1 cup finely chopped onion
1-2 dozen white corn tortillas cut into pieces
2-3 cups shredded monterey jack cheese
Heat oven to 350 degrees. Lightly grease 13x9 baking dish (or use cooking spray).
Sauce: Mix soup, broth and Salsa Verde
Assemble as follows:
1. Thin layer of sauce on bottom of pan
2. Layer of tortilla pieces
3. Layer of chicken
4. Layer of onion and chopped green chiles
5. Layer of sauce (be generous)
6. Layer of cheese
Repeat steps 2 through 6.
Bake for an hour.
To serve: Drizzle more Salsa Verde over top of casserole or serve as a side garnish.
