Grilling Tips and Ideas for ASC Dry Rubs

Blend Steak and Fajita Marinade with chicken broth (equal parts) for an injection marinade (esp. good for pork or turkey).

ASC Blackened Seafood Fillets
(Featuring Austin Spice Company's Texas Red Lemon Pepper)
4 (6- to 7- ounce) fillets of catfish, redfish, red snapper or tuna
1/4 cup Texas Red Lemon Pepper
1/2 (1 stick) cup melted butter
Preheat oven to 400 degrees.
Roll the fillets in Texas Red Lemon Pepper and dip in the melted butter. Heat a cast-iron skillet over higheat and place the fish into it. Cook the fish in the skillet for only 45 seconds per side. Transfer fillets to a baking pan and cook in the oven for 8 minutes.

ASC shrimp/crab/crawfish boil
1/4 cup Texas Red Lemon Pepper
Large onion peeled and cut into quarters
3 tablespoons chopped garlic
1 tablespoon black pepper
1/3 cup salt
3 lemons, rinsed and quartered
3 bay leaves
2 quarts water
