ASC Blackened Seafood Fillets
(Featuring Austin Spice Company's Texas Red Lemon Pepper)
4 (6- to 7- ounce) fillets of catfish, redfish, red snapper
or tuna
1/4 cup Texas Red Lemon Pepper
1/2 (1 stick) cup melted butter
Preheat oven to 400 degrees.
Roll the fillets in Texas Red Lemon Pepper and dip in
the melted butter. Heat a cast-iron skillet over higheat and place the
fish into it. Cook the fish in the skillet for only 45 seconds per side.
Transfer fillets to a baking pan and cook in the oven for 8 minutes.
