ASC Green Chile Stew
Featuring our Green Chile Salsa and our Texas Red Lemon Pepper

1 pound boneless, skinless chicken (we prefer thighs) or 1 pound boneless pork, cut into bite-size pieces
ASC Texas Red Lemon Pepper to taste (optional, but adds wonderful flavor)
1 large onion, coarsely chopped
1 12 oz jar of ASC Green Chile Salsa (or 1 pound green chile, peeled and chopped)
2 tbs minced garlic
Cumin to taste
1 tbs oil, or cooking spray
1 cup chicken broth
1 pound potatoes, cut into bite size pieces
1 pound carrots, cut into bite size pieces (optional)

Sprinkle chicken/pork with ASC Texas Red Lemon Pepper.

Add oil or cooking spray into stockpot or deep skillet.
Stir fry chicken/pork and onion until meat is browned and onion is transparent.
Add green chile salsa, garlic and cumin.
Add water to barely cover chicken mixture.

Simmer 15 minutes or more.

Add chicken broth and potatoes.

Simmer again, 15 minutes or more.

Serve with corn bread, biscuits or warm tortillas.
